It sits at 12.5% ABV and is a French white blend typically built from Sauvignon Blanc and Sémillon, produced with attention to clean fruit extraction and often stainless steel fermentation to preserve freshness, sometimes with a touch of oak for texture depending on the cuvée.

The wine shows citrus zest, green apple, pear and a hint of stone fruit with floral notes like honeysuckle and a subtle chalky minerality that lingers. With oysters it amplifies briny salinity and lifts the shellfish’s natural sweetness; with goat cheese it cuts through the creaminess while complementing tangy, herbal flavors, making both pairings bright and harmonious.

Producer Information: Château Beychevelle

Château Beychevelle is a wine estate in the Saint-Julien appellation on the left bank of Bordeaux, set near the Gironde estuary and the Médoc peninsula. The estate traces its origins to the 17th century and its current identity was shaped through long-term vineyard development and classification history, including recognition in the 1855 Classification as a Fourth Growth.
